a menu inspired by the warmest, most crowded alleyways of Kolkata
Aniketh is a Bengali artist, philosopher, and cook based in Amsterdam. Co-founder of Content Care, Aniketh will be cooking up not just philosophy but gorgeous flavors this time around. Their food explores the varied histories of colonial trade, recipes passed down the generations, and practices of nurturing/care that help us resist colonial violence.
This Saturday only, Aniketh returns to our kitchen with Khao Gully: a menu inspired by the warmest, most crowded alleyways of Kolkata.
âKhao gullyâ means eating alley: a place where snacks, small meals and comfort dishes live side by side, reflecting the many communities that shaped the city through migration and resilience. Expect a flowing menu of sharing plates, street snacks and satisfying dishes. Some meant to pass around, some you may want to keep entirely to yourself.
For those who joined in January, a few favourites return, including the much loved aloo chole. You might also recognise Aniketh from cooking at Kurumbu.
Aniâs dinner is guided by the idea of âcaring to tasteâ: an invitation to travel through food and to reimagine the cuisines of the Indian subcontinent beyond nationalistic frames and colonial tropes. Moving past the shorthand of currie.
