What does umami actually taste like?
Many of us have heard of it. Some think they know it. Yet when asked to describe it, we often struggle to find the words.
This gathering invites you to slow down, taste differently, and explore the world's most elusive taste through conversation, experimentation, and shared discovery.
What will you do
Hosted in the Panorama Studio at Mediamatic, we'll spend relaxed Thursday evening around a table filled with umami-rich ingredients. Together we'll taste, compare, question, and redefine what umami means—not as a fixed definition, but as a sensory experience that unfolds differently for everyone.
This is not a cooking class, and it's not a lecture.
It is a participatory experience where every guest contributes to the table.
Whether you're a food lover, designer, chef, artist, entrepreneur, researcher, or simply curious, you're invited to join.
Throughout the gathering we'll experiment with perception, discovering how our senses influence taste and how attention can transform the way we experience food.
What to bring
Bring one ingredient that you believe expresses umami! It might be something familiar, surprising, fermented, fresh, or deeply personal. We'll introduce our ingredients, taste them together, and explore why each one evokes this remarkable fifth taste.

Sensory food designer Laila Snevele explores the perception of food through multisensorial research. What role does color, shape, texture, temperature, sound, mouthfeel and aroma play in our understanding of a certain food? And how can we use these elements to change or elevate our sense of taste? Snevele designs recipes for the brain.
She create custom sensory solutions for brands, events and restaurants and gives talks and workshops on creative thinking and food design.
