Foraging and cooking together – even in winter, it’s possible! What can be found when nature is asleep? Join us in the search for hidden foods and warm yourself by the fire as we cook!
This morning, I’ll take you to explore the winter plants of the city. What still grows? What can be harvested at this time of year? You’ll learn the basics of plant identification, which ones are edible, and how to harvest them sustainably. Back at De Ceuvel, we’ll get culinary with what we’ve found, cooking over a small fire. That final part – the cooking – is the cherry on top!
Cooking together gives you a real reason to forage during the walk. It also helps you take that first step toward actually using wild greens in the kitchen, and it’s often quite special to taste the dishes and discover how ‘rich’ they often are. And finally, it’s simply wonderful to gather around a fire at this time of year... I work with the season & the moment, which makes every foraging trip unique...

Anke Wijnja connects people with themselves and with nature through her company The Nature Connection. She is based at De Ceuvel, where she also manages the Purifying Park. Anke has extensive knowledge of nature and everything that grows and blooms, and shares it with great enthusiasm. In addition to leading foraging expeditions, she is a nature coach and offers outdoor mindfulness sessions.
