Khalida and Yagel join forces for a warm, comforting Moroccan 2-course menu made to ease you gently into autumn. Think slow-simmered tajine, warm flatbread and a cardamom-infused honey close.
Drawing on her Moroccan roots, Khalida cooks food that's colourful, generously spiced and full of bold flavours. Growing up, meat was on the table every single day. But somewhere along the way vegetables stole her heart and cooking with vegetables is where her creativity really comes alive. She learned to cook the way her mom did...no recipes or measuring cups, just instinct and using all five senses. Since she was little she helped out where she could, which was mostly chopping since she wasn't always trusted with the pots. Now she gets it, cause great flavour takes patience and rushing a pot is basically a crime. To her, food is never just food. It's a way to bring people together, honour where she comes from and question whose stories usually end up on our plates. One act of decolonizing food at a time. Looking ahead, she would love to bring cooking, education and other art forms closer together around one table.
Yagel is a chef who has explored fundamental flavours by cooking at a homeless shelter. Every Thursday morning this place lets him experiment with cuisines from around the world while feeding plenty of empty stomachs. It's here that he fell in love with being in the kitchen, grounded in one core goal: sharing honest, simple food with others.
