DESCRIPTION:One of the biggest mysteries of fermentation is the flavour of 
	cocoa. The\nordinary chocolate that we are used to\, from chocolate cigare
	ttes and easter\nbunnies to high quality supermarket chocolate\, has been 
	burnt on high\ntemperatures and therefore lost some of its best flavours.\

	n\nFor this Aromatheque edition\, María Salvadora Jiménez\, will show us t
	he special\ntechniques that she uses to select the best cacao beans from a
	ll over the world.\n\nShe will take us to small cacao plantages in Mexico 
	and South America. She\ncollaborates with farmers and helps them to improv
	e their harvest and get to the\nbest type of cacao. This cacao has been ca
	refully selected and needs to be\nroasted on low temperatures to maintain 
	most of its precious flavors. She will\ntell us all about the process of s
	election and will reveal the secrets of high\nquality cacao. And of course

	nth olfactory artist Frank Bloem curates a program where experts\,\nartist
	s\, designers and scientists shift our perspectives on what we eat\, drink
	\,\ntouch\, inhale\, secrete and smell. These so called "lower senses" are
	 not only\nplaced lower in our body but also were considered through histo
	ry as lesser\,\nmore banal and not sophisticated. We think differently. St
	arting from a simple\ntheme with a thought provoking question\, we go on a
	 journey and inviting people\nfrom different disciplines to discover the w

	uses scent as his primary medium. He started his\nlab The Snifferoo in 201
	6 and creates scent art projects. From elephant scents\nfor Artis Zoo to e
	rotic pine scents for festival Into the great wide Open. He\nworks with ar
	tist and museums and has a long term collaboration with The Embassy\nof th
	e North Sea for who he made art projects and a perfume. For Mediamatic\nFr
	ank has been active since 2017. From Collaborating on Odorama evenings wit
	h\nCaro Verbeek to giving scent and distillation workshops. Since 2019 he 
	is the\nmanager of the Aroma Lab that he set up together with Niklaus Metl
